I have a Yamaha amp that really is excellent and a similar speaker package.
The two together will cost you £200 (you can plug EVERYTHING into this amp), then spend another £100 on cables (toslink for PS3, another toslink or a component cable for DVD etc etc).
There you go... All your needs for £300. If you can actually GO to Richer Sounds, do. Take a list of all the stuff you want to attach to the amp and they will sort you out with the cables.
Edit: The main thing with the HDMI cables is that although they carry sound in some circumstances, I feel that you're better off just using HDMI for pictures and either a toslink or component cable for the sound. Just a personal opinion...
