The air is channeled up under the wing for lift. a sharp edge would not channel the air it would just cut it.

The idea is to get a partial vacuum over the top of the wing so as to provide lift. This is easiest to do with a wing that tapers to the rear and has a flat bottom.If you're interested, google "Reynolds Number".
