It's the taste. The stronger the taste the more Sharp it is considered. The milder the taste the milder the cheese is considered.

higher acidicity like it just has that bite too has to deal with how long its been aged

The length of the time it is aged. Sharp means it has more of a tangy taste to it.

"Sharp" generally refers the amount of acid in a cheese.































As cheese ages, the lactose in the curd (pre-cheese) turns into lactic acid. Most cheddars are cloth-bound, which means they're wrapped in cloth while they turn from curd into cheese. The lactic acid tried to escape during aging. So if a cheddar is wrapped tightly, it will retain more acid, making it more acidic than others, and therefore it can be called "sharp."
