there is medium and mild chedder or extra sharp. you might want to try colby too.

I love Gouda! There is a cheese called Dubliner by Kerrygold imported from Ireland, you can find it in the grocery store, it tastes almost like gouda and sharp cheddar. You won't be disappointed and it is not very expensive a 7oz block costs about $4-$5 dollars.
